In Lucknow, the capital of Uttar Pradesh, we have some secret recipes of some absolutely tempting dishes which are served as breakfast. One of them being “Khasta with Aaloo.” Khasta is the spherical shaped fried, salty donut, which we call as kachori in Rajasthan. The difference in the taste of this kachori is due to the difference of preparation style of the kachori in both the states. The key difference is the type of potato that is utilised to make the spicy dum aaloo to serve with the khasta. It is the in grown vegetable of U.P. whereas in Rajasthan the potato is imported from U.P.

The potato which is the staple food of U.P has got a little different taste and it lands fresh and easy from farm to the table in the homes of people in U.P. Another difference lies in the type of oil used in the preparation. In U.P, ‘Desi Ghee’ is mostly preferred to cook the kachori or khasta. In Rajasthan, we have the refined oil or mustard oil.
But anyways, talking about the breakfast, this Khasta with Aaloo is as delicious and impeccable as the original desi ghee. I am in love with this dish.
